Ah, another long weekend is in our future.  So exciting!  One day extra away from work and structure can really feel like a mini-vacay.  What are your plans for the weekend?  Trying any fabulous recipes?  I want to try this drink I saw on thekitchn.com.  Alas, we still have 5 suppers to get through until the weekend – let’s make them yummy meals so the time is enjoyable! 

Here’s what we’re eating this week:

SundayRoasted beet and feta salad, grilled beef tenderloin steaks, roasted baby potatoes

MondayGrilled vegetable quinoa salad with grilled chicken breast.  I substituted sunflower seeds for the pumpkin seeds.

TuesdayGrilled chicken with peach BBQ sauce from Gwyneth Paltrow’s feature in Bon Appetite magazine.   On a side note, I have heard excellent things about Gwyneth’s recipes.  This feature in Bon Appetite was very good, so I may just have to go and get her new cookbook!   Since this seems as though it will be a flavour-filled meat dish, I am going to keep the sides simple with baked potatoes, baked beans and a green salad.   My mom and I have been regularly buying Bush’s Grilling Beans whenever we’re in the US.  Love them!!  Such great flavours.  We’ll have the Southern Pit Barbeque flavour with this meal!

WednesdaySweet and Tangy Sausage Pepper Kabobs from Canadian Living with basmati rice and snow peas.  Use lean sausage if you can! 

ThursdayScrambled eggs with fresh corn, goat cheese, and oven-roasted tomatoes served with toasted crusty multigrain bread.  Since we’re going to be getting ready for our long weekend, a quicker dinner meal is a great idea for this night.  This is also our ‘meatless main dish’ of the week.  Meatless main dishes are a great idea once a week if you’re looking to improve your heart health and reduce your risks!
